Fredy A. Robles
Chef Fredy runs the back of the house with a passion for pleasing customers as strong as his passion to having a staff that enjoys coming to work every day — evident in the smile he has for all, and the commitment he has to his art.
Since 1993, he has expertly guided the kitchen of Mindy's. He is a graduate of L'Academie de Cuisine. He understands from years in the food industry at all ranks, that hard work and self-discipline are essential and he promotes those qualities in employees — and that you are only as strong as your weakest link.
Since taking over as Executive Chef, Fredy has developed and created ethnic menus from Thai to Middle Eastern to African. He has also discovered a talent for fusion cuisine and often introduces foods and techniques from Latin and South America to Mindy's menus.
Perhaps the easiest way to evaluate Fredy's leadership is by looking at his employees. He has been responsible for all kitchen staff and drivers since 1995. While this industry has a high turnover generally, the kitchen staff at Mindy's have histories up to ten years.
Fredy loves to travel and goes camping several times a year to get away from the hustle and bustle of catering. He is married to Mindy's HR Director and Accountant, Silvia Robles and spends his spare time with their three growing boys. Future chefs???
